Introducing one of two of our most exclusive whiskey offerings. French Oak Upshot is a once-off, with only 100 bottles available. Following somewhat of a tradition at Whipper Snapper, we didn’t want to pick just any used barrel for a premium new-make spirit. Head distiller Jimmy went on the hunt and selected a 100L virgin French oak barrel which is usually reserved for fine wines rather than whiskey.
This oak, Quercus robur, grows in most parts of Europe. Like Hungarian oak these trees grow slower and shorter due to the colder climate and soil conditions, giving the oak structure a tighter grain, allowing the spirit to age slower with more gentle tannins.
This time Jimmy wanted a traditional toast finish, making it the first-ever whiskey produced at Whipper Snapper, having the more delicate toasted barrel finish. This was not a finishing barrel; instead, the Upshot new-make spent its entire life maturing in the oak.
After spending three years patiently aging away, the barrel has delivered the goods giving us plenty of vanilla, sweet fruits, raisins, almonds, spice, and floral notes, to name a few.
Upshot French Oak is unique and presents flavours you won’t find in any other whiskey on the market. A style of Upshot that won’t be replicated again, making it an authentic Australian craft whiskey.
