Hailing from Bruce Rock, (Ballardong boodja), Western Australia, the Fuchsbichler family, originally from Emmering, Bavaria, has been growing a unique, heirloom German rye for over a century.
Kevin and Jane, along with their son Josh—the fourth generation—continue to cultivate the heritage rye first planted by Michael Fuchsbichler in 1911, now famous in the shire for its distinct quality.
Over the past 40 years, dozens of other varieties were trialed, but the flour mills always preferred the old faithful heritage rye for its colour and quality in bread making. Though it doesn’t yield as well as wheat and thrives in less favourable soils, the rye has carved out a niche market in WA, with only a handful of growers still producing it.
Our rye whiskey features a high 85% rye mash bill (15% malted barley), truly reflecting both the local region of where it’s been grown for over 100 years and the heritage of this very special variety.
This brand-new rye whiskey delivers a bold experience, with flavors like spicy vanilla, orange peel, cherry cola, clove, and salted toffee. Aged for a minimum four years in virgin charred American oak barrels, and matured in Perth’s Mediterranean climate, this is rye whiskey redefined—perfect for enjoying across seasons and in good company.
